PESTO GREEN GODESS SALAD

Lunch on the Terrace, with a View and a Breeze

When I was younger, we didn’t call things “Green Goddess”—we just called them fresh. But I remember warm days when Mama would step outside, scissors in hand, and clip herbs from the garden while humming to herself. There was always something calming about those moments—sun on her back, basil in her apron pocket. This salad brings me right back. Creamy, herbal, and kissed with Alessi Pesto, it’s a modern nod to her love of freshness and flavor, packed into a bowl that feels like a sunny afternoon in Liguria.

It’s perfect for lunch on the terrace, a light dinner with grilled chicken, or anytime you want to eat something that tastes like it was made with love and sunlight.


INGREDIENTS

  • 1 head romaine lettuce, chopped

  • 1 cup baby spinach

  • 1 avocado, diced

  • 1/2 cup cucumber, thinly sliced

  • 1/4 cup green onions or chives, chopped

  • 1/4 cup fresh parsley or basil, chopped

  • 1/4 cup Alessi Pesto

  • 1/4 cup plain Greek yogurt or sour cream

  • Juice of 1 lemon

  • 1 tablespoon Alessi Extra Virgin Olive Oil

  • Alessi Sea Salt & Ground Black Pepper to taste

  • Optional: toasted pine nuts or crumbled feta


INSTRUCTIONS

  1. In a small bowl, whisk together Alessi Pesto, Greek yogurt, lemon juice, olive oil, salt, and pepper until creamy. Adjust seasoning to taste.

  2. In a large salad bowl, combine romaine, spinach, avocado, cucumber, herbs, and green onions.

  3. Drizzle the dressing over the greens and gently toss until well coated.

  4. Top with toasted pine nuts or crumbled feta if desired.

  5. Serve chilled, ideally with a slice of crusty bread and the sound of birds nearby.
