BEET HUMMUS WITH PINE NUTS

This is not your average beige hummus, babe. This is hummus with flair. With drama. With beets. It’s creamy, tangy, and that color? Forget it — she’s a showstopper. One swirl of this on a platter and suddenly you’re the artsy friend who brings “the cool dip” to parties.

We’re layering in those earthy-sweet roasted beets, topping it with toasty Alessi Pine Nuts, and giving it just enough garlic to keep things interesting. Bonus? It’s secretly healthy, but we don’t have to talk about that part.


Ingredients

  • 1 medium roasted beet, peeled and chopped

  • 1 (15 oz) can chickpeas, drained and rinsed

  • 2 tablespoons tahini

  • 1 clove garlic

  • 2 tablespoons lemon juice

  • 2 tablespoons Alessi Extra Virgin Olive Oil (plus more for drizzling)

  • 1/2 teaspoon Alessi Sea Salt

  • 1/4 teaspoon Alessi Ground Black Pepper

  • 2 tablespoons Alessi Pine Nuts, toasted

  • Optional: fresh herbs or feta for topping


Instructions

  1. Blend it up — In a food processor, combine beets, chickpeas, tahini, garlic, lemon juice, olive oil, salt, and pepper. Blend until super smooth and creamy.

  2. Taste and tweak — Add a little more lemon or salt if it needs a punch.

  3. Scoop into a bowl and use a spoon to swirl the top into a pretty pattern.

  4. Top it off — Drizzle with more olive oil and sprinkle generously with toasted Alessi Pine Nuts. Add herbs or feta if you’re feelin’ extra.

  5. Serve with pita, crackers, or veggies… or honestly, just a spoon.
